2 cups flour
1 tsp. salt
1 Tblsp. cocoa
1 1/4 cup sugar
1 tsp. soda
2 eggs
3/4 cup shortening
1 tsp. vanilla
1 cup water
Mix all ingredients together at slow speed with hand mixer (I SO wish I could just throw this all in a KitchenAid, but alas, that will have to wait). Place in a muffin tin lined with paper cups & top with chocolate chips. Bake at 375 degrees for 20-25 minutes. My sister Elena gave me this recipe & I wondered why they were called cocoa "pink" cuplets. I found out why when I first took a bite of one. It's kind of hard to tell in this picture, but they really do have a pinkish color in the middle. Pretty nifty. :) Thanks so much for sharing Elena! :)
